burgandavid's Personal Story: It only takes a day to go from milk to yogurt! heat the milk to kill any random living orgs, cool to incubator temp (on thermometer), add starter (I use plain store bought yogurt) and put in the machine for 6-8 hours. Start a batch in the morning, come home to yogurt in the afternoon! the longer it incubates (within reason) the firmer it is, so you can leave it longer, or strain it to get greek yogurt!
